Description
Cream Cheese Stuffed French Toast with Blackberry Compote is a decadent breakfast dish featuring rich cream cheese filling between golden slices of toast, topped with a sweet-tart blackberry compote.
Ingredients
Scale
- 8 slices of thick bread (Brioche or Challah)
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup milk (or almond milk)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup fresh blackberries
- 1/2 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon butter (for cooking)
Instructions
- In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese mixture onto 4 slices of bread and top each with another slice to form sandwiches.
- In a shallow dish, whisk together eggs, milk, cinnamon, and salt.
- Melt butter in a skillet over medium heat. Dip each sandwich into the egg mixture, coating both sides.
- Cook the sandwiches in the skillet for 3-4 minutes per side, until golden brown.
- In a saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes until the compote thickens.
- Cut French toast sandwiches diagonally and plate. Drizzle with warm blackberry compote and dust with powdered sugar if desired.
Notes
- Use gluten-free or whole grain bread as an alternative.
- Vegan cream cheese can be substituted for a dairy-free version.
- Sweeteners like maple syrup, agave, or stevia can replace sugar.
- Add spices like nutmeg to the cream cheese for extra flavor.
- Store leftovers in the fridge for up to 3 days or freeze before cooking.
