Instructions

  1. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Spread the cream cheese mixture onto 4 slices of bread and top each with another slice to form sandwiches.
  3. In a shallow dish, whisk together eggs, milk, cinnamon, and salt.
  4. Melt butter in a skillet over medium heat. Dip each sandwich into the egg mixture, coating both sides.
  5. Cook the sandwiches in the skillet for 3-4 minutes per side, until golden brown.
  6. In a saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes until the compote thickens.
  7. Cut French toast sandwiches diagonally and plate. Drizzle with warm blackberry compote and dust with powdered sugar if desired.
