Description
A hearty and comforting soup made with chicken, tomatoes, and parmesan cheese, all cooked in a slow cooker.
Ingredients

- 1 lb chicken breast
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place the chicken breasts in the crockpot.
- Add the diced tomatoes, chicken broth, onion, garlic, and Italian seasoning.
- Season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken, shred it, and return it to the crockpot.
- Stir in the heavy cream and parmesan cheese.
- Cook for an additional 30 minutes on low.
- Serve hot, garnished with fresh basil.

- This soup can be stored in the refrigerator for up to 3 days.
- Freeze leftovers for up to 3 months.
