Instructions
- Pat the chicken thighs dry with paper towels and season with salt and black pepper.
- Melt the unsalted butter in a small skillet over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
- In the crockpot, pour in the chicken broth, add the sautéed garlic and butter mixture, chopped thyme, and lemon juice, and stir to combine.
- Place the seasoned chicken thighs into the crockpot, ensuring they are submerged in the broth mixture.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C).
- For crispy skin, transfer the cooked chicken to a baking sheet and broil for 3-5 minutes until golden brown.
- Plate the chicken thighs, drizzle with garlic butter sauce, and serve warm with sides.
