- 2 cups all-purpose flour
- 1 cup fresh strawberries, pureed (about 8–10 medium strawberries)
- 1 teaspoon strawberry extract
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon baking powder
- 1/4 cup powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Wash the fresh strawberries, remove the stems, and puree them until smooth. Measure out 1 cup of the strawberry puree.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and strawberry extract until well combined.
- In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add this to the wet ingredients, mixing until just combined.
- Gradually add the strawberry puree to the dough, mixing until just combined.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and flatten slightly.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
- Dust with powdered sugar once cooled.
