- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon chipotle pepper in adobo sauce, minced
- 1 teaspoon lime juice
- 1/4 cup corn, cooked and cooled
- 1 tablespoon cilantro, chopped
- Salt to taste
- Paprika for garnish
Instructions
- Boil the eggs for 10 minutes and cool them in ice water.
- Peel the eggs and cut them in half.
- Remove the yolks and place them in a bowl.
- Add mayonnaise, chipotle pepper, lime juice, corn, cilantro, and salt to the yolks.
- Mash and mix the ingredients until smooth.
- Fill the egg whites with the yolk mixture.
- Sprinkle paprika on top for garnish.

- Adjust the amount of chipotle for desired spiciness.
- Use fresh corn for the best flavor.
- These can be made a few hours in advance.
