Description

Elote Deviled Eggs with Zesty Chipotle Mayo are a flavorful twist on classic deviled eggs, inspired by the popular Mexican street food elote.


Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce, minced
  • 1 teaspoon lime juice
  • 1/4 cup corn, cooked and cooled
  • 1 tablespoon cilantro, chopped
  • Salt to taste
  • Paprika for garnish

Instructions

  1. Boil the eggs for 10 minutes and cool them in ice water.
  2. Peel the eggs and cut them in half.
  3. Remove the yolks and place them in a bowl.
  4. Add mayonnaise, chipotle pepper, lime juice, corn, cilantro, and salt to the yolks.
  5. Mash and mix the ingredients until smooth.
  6. Fill the egg whites with the yolk mixture.
  7. Sprinkle paprika on top for garnish.

Notes

  • Adjust the amount of chipotle for desired spiciness.
  • Use fresh corn for the best flavor.
  • These can be made a few hours in advance.
