Ingredients

- 1 cup orzo pasta
- 2 tablespoons garlic, minced
- 2 tablespoons butter
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 1 cup vegetable broth
- Salt to taste
- Pepper to taste
Instructions
- In a saucepan, melt the butter over medium heat.
- Add minced garlic and sauté until fragrant.
- Add the sliced mushrooms and cook until they soften.
- Stir in the orzo and cook for 1-2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer until the orzo is tender, about 10 minutes.
- Add fresh spinach and cook until wilted.
- Season with salt and pepper to taste. Serve warm.

- You can add grated Parmesan for extra flavor.
