Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly under cold water and pat them dry.
  3. In a large mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, sea salt, and black pepper.
  4. Add the baby potatoes to the bowl and toss until evenly coated.
  5. Spread the seasoned potatoes in a single layer on a baking sheet.
  6. Roast the potatoes for about 25-30 minutes, tossing halfway through.
  7. Check for doneness; they should be golden brown and crispy.
