A delightful blend of flavors that warms your heart, featuring zesty lemon, tender chicken, and comforting orzo pasta.


Ingredients

  • 1 lb (450 g) chicken breast, boneless and skinless
  • 1 cup (200 g) orzo pasta
  • 6 cups (1.4 L) vegetable broth
  • 1/4 cup (60 mL) fresh lemon juice (about 2 lemons)
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup (15 g) fresh dill, chopped (or 1 tablespoon dried dill)
  • 2 cups (60 g) fresh spinach, roughly chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the pot and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the pot and set aside to cool.
  2. In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  4. Add the orzo pasta to the simmering broth and cook according to package instructions, usually about 8-10 minutes, until al dente.
  5. While the orzo is cooking, shred the cooked chicken into bite-sized pieces. Once the orzo is ready, stir the shredded chicken back into the pot.
  6. Stir in the fresh lemon juice, chopped dill, and spinach. Cook for an additional 2-3 minutes, just until the spinach wilts.
  7. Taste the soup and adjust seasoning with salt and pepper as needed. Ladle the soup into bowls and garnish with additional fresh dill if desired. Serve warm and enjoy the comforting flavors!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • When reheating, warm it on the stove over low heat.
  • If freezing, omit the orzo before freezing and add it fresh when reheating.
