Description

Grilled Zucchini and Yellow Squash Fritters with Feta are crispy on the outside and tender on the inside, combining fresh vegetables with creamy cheese for a delightful appetizer or side dish.


Ingredients

  • 2 medium zucchinis, grated
  • 2 medium yellow squashes, grated
  • 1 cup crumbled feta cheese
  • 2 large eggs
  • 1 cup breadcrumbs (preferably whole wheat or panko)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Olive oil for grilling

Instructions

  1. Prepare the vegetables by grating the zucchinis and yellow squashes, then squeeze out excess moisture.
  2. In a large bowl, mix the grated vegetables, crumbled feta, eggs, minced garlic, chopped dill, salt, and pepper until well combined.
  3. Gradually add breadcrumbs to the mixture until it holds together.
  4. Form the mixture into small patties, about 2-3 inches in diameter.
  5. Preheat the grill to medium heat and lightly oil the grates.
  6. Grill the fritters for about 4-5 minutes on each side until golden brown and crispy.

Notes

  • For gluten-free, use almond flour or gluten-free breadcrumbs.
  • For vegan, replace eggs with flax eggs and use plant-based feta.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place in a preheated oven at 350°F for about 10 minutes.
