- 2 medium zucchinis, grated
- 2 medium yellow squashes, grated
- 1 cup crumbled feta cheese
- 2 large eggs
- 1 cup breadcrumbs (preferably whole wheat or panko)
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Olive oil for grilling
Instructions
- Prepare the vegetables by grating the zucchinis and yellow squashes, then squeeze out excess moisture.
- In a large bowl, mix the grated vegetables, crumbled feta, eggs, minced garlic, chopped dill, salt, and pepper until well combined.
- Gradually add breadcrumbs to the mixture until it holds together.
- Form the mixture into small patties, about 2-3 inches in diameter.
- Preheat the grill to medium heat and lightly oil the grates.
- Grill the fritters for about 4-5 minutes on each side until golden brown and crispy.
Notes
- For gluten-free, use almond flour or gluten-free breadcrumbs.
- For vegan, replace eggs with flax eggs and use plant-based feta.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, place in a preheated oven at 350°F for about 10 minutes.
