- 2 medium zucchinis, grated
- 1 cup crumbled feta cheese
- 2 large eggs
- 1 cup breadcrumbs (preferably whole wheat or panko)
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- Olive oil for grilling (about 2 tablespoons)
Instructions
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, crumbled feta cheese, eggs, breadcrumbs, chopped green onions, minced garlic, chopped dill, salt, and pepper. Mix until well combined.
- Shape the mixture into small patties, about 1/2 inch thick.
- Preheat the grill to medium heat and brush the grates with olive oil. Grill the fritters for about 4-5 minutes on each side until golden brown and crispy.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- To reheat, place in a skillet over medium heat until warmed through.
- For freezing, separate fritters with parchment paper to prevent sticking.
