Ingredients
Scale
- 1.5 lbs chicken thighs (about 6–8 pieces, bone-in or boneless)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon fresh ginger, grated
- 4 cloves garlic, minced
- 1/2 cup pineapple juice
- 2 tablespoons sesame oil
- Salt and pepper, to taste
- 1/4 cup green onions, chopped (for garnish)
- 1 cup pineapple chunks (fresh or canned, for garnish)
Instructions
- Prepare the marinade by combining soy sauce, pineapple juice, brown sugar, grated ginger, minced garlic, and sesame oil in a large mixing bowl.
- Marinate the chicken thighs in the mixture, ensuring they are fully coated, and refrigerate for at least 1 hour or overnight.
- Preheat the grill to medium-high heat (about 375°F or 190°C).
- Remove the chicken from the marinade, season with salt and pepper, and grill for about 6-8 minutes per side until cooked through.
- During the last few minutes of grilling, brush the chicken with reserved marinade for a glossy glaze.
- Prepare garnishes by grilling pineapple chunks until caramelized.
- Serve the grilled chicken on a platter, topped with grilled pineapple and chopped green onions.
Notes
- For a gluten-free option, substitute soy sauce with tamari.
- For a lower-sugar version, use coconut aminos instead of soy sauce and reduce the brown sugar.
- Let the chicken rest after grilling for juicier results.
