  • 1/4 cup brown sugar

  • 4 cloves garlic, minced
  • 1/2 cup pineapple juice
  • 2 tablespoons sesame oil
  • Salt and pepper, to taste
  • 1/4 cup green onions, chopped (for garnish)
  • 1 cup pineapple chunks (fresh or canned, for garnish)

Instructions

  1. Prepare the marinade by combining soy sauce, pineapple juice, brown sugar, grated ginger, minced garlic, and sesame oil in a large mixing bowl.
  2. Marinate the chicken thighs in the mixture, ensuring they are fully coated, and refrigerate for at least 1 hour or overnight.
  3. Preheat the grill to medium-high heat (about 375°F or 190°C).
  4. Remove the chicken from the marinade, season with salt and pepper, and grill for about 6-8 minutes per side until cooked through.
  5. During the last few minutes of grilling, brush the chicken with reserved marinade for a glossy glaze.
  6. Prepare garnishes by grilling pineapple chunks until caramelized.
  7. Serve the grilled chicken on a platter, topped with grilled pineapple and chopped green onions.
