Description
A low-carb alternative to traditional pizza using spaghetti squash as the base.
Ingredients

- 1 medium spaghetti squash
- 1 cup mozzarella cheese, shredded
- 1/2 cup pizza sauce
- 1/2 cup pepperoni slices
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash cut-side down on a baking sheet and bake for 30-40 minutes until tender.
- Once cooked, use a fork to scrape the insides into strands and place in a bowl.
- Add mozzarella cheese, Parmesan cheese, pizza sauce, Italian seasoning, salt, and pepper to the squash strands. Mix well.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Top with pepperoni slices and additional cheese if desired.
- Bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
Notes
- For a vegetarian option, substitute pepperoni with your choice of vegetables.
- You can prepare the spaghetti squash in advance to save time.
- Store leftovers in an airtight container for up to 3 days.
