- 2 cups plain Greek yogurt (unsweetened)
- 1 cup fresh raspberries (washed and patted dry)
- 2 tablespoons lemon juice (freshly squeezed)
- 3 tablespoons honey (or to taste)
- 1 tablespoon lemon zest (freshly grated)
Instructions
- In a blender or food processor, combine the fresh raspberries, lemon juice, and honey. Blend until smooth.
- In a large mixing bowl, add the Greek yogurt and lemon zest. Stir well to combine.
- Gently fold the raspberry mixture into the yogurt mixture to create a marbled effect.
- Line a mini muffin tin with silicone molds or paper liners. Spoon the yogurt-raspberry mixture into each mold, filling them about three-quarters full.
- Place the muffin tin in the freezer and freeze for at least 4 hours, or until solid.
- Once frozen, carefully pop the yogurt bites out of the molds.
- Serve immediately or store in an airtight container in the freezer for up to two weeks.
Notes
- For a dairy-free option, use coconut yogurt or almond yogurt.
- If avoiding sugar, consider using stevia or agave syrup instead of honey.
- These bites can be made a few days in advance and stored in the freezer.
