Ingredients
Scale
- 200 grams graham cracker crumbs (about 2 cups)
- 100 grams unsalted butter, melted (about 1/2 cup)
- 450 grams cream cheese, softened (about 16 oz)
- 150 grams granulated sugar (about 3/4 cup)
- 2 large eggs
- 1 teaspoon vanilla extract
- 300 grams ripe mango puree (about 2–3 ripe mangoes)
- 1 tablespoon fresh basil, finely chopped (plus extra for garnish)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (optional, for thickening)
- Fresh basil leaves for garnish
- Mango puree for drizzling (optional)
Instructions
- Preheat your oven to 175°C (350°F). In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×9-inch baking dish to form an even layer. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and chopped basil until well combined.
- Gently fold in the mango puree into the cream cheese mixture until fully incorporated. If using cornstarch, mix it in at this stage.
- Pour the mango cheesecake mixture over the cooled graham cracker crust, spreading it evenly.
- Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Allow it to cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or until fully chilled and set.
- Once chilled, carefully cut the cheesecake into neat squares. Garnish each square with a fresh basil leaf and a drizzle of mango puree.
- Serve these refreshing mango basil cheesecake bars as a delightful dessert!
