  • 300 grams ripe mango puree (about 23 ripe mangoes)
  • 1 tablespoon fresh basil, finely chopped (plus extra for garnish)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh basil leaves for garnish
  • Mango puree for drizzling (optional)

Instructions

  1. Preheat your oven to 175°C (350°F). In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×9-inch baking dish to form an even layer. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and chopped basil until well combined.
  3. Gently fold in the mango puree into the cream cheese mixture until fully incorporated. If using cornstarch, mix it in at this stage.
  4. Pour the mango cheesecake mixture over the cooled graham cracker crust, spreading it evenly.
  5. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Allow it to cool at room temperature for about 1 hour, then refrigerate for at least 4 hours or until fully chilled and set.
  6. Once chilled, carefully cut the cheesecake into neat squares. Garnish each square with a fresh basil leaf and a drizzle of mango puree.
