- 2 cups rolled oats
- 1 cup pitted dates, chopped
- 1/2 cup maple syrup
- 1/2 cup almond butter (or any nut butter)
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- In a medium bowl, combine chopped pitted dates, maple syrup, almond butter, vanilla extract, ground cinnamon, and sea salt. Mix until smooth.
- In a large mixing bowl, add rolled oats and pour the date mixture over them. Stir until fully combined.
- Transfer the mixture to the prepared baking pan and press it firmly and evenly into the pan.
- Bake for 25-30 minutes, or until the edges are golden brown and the top is set.
- Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and cool completely on a wire rack before cutting into bars.
Notes
- Store in an airtight container at room temperature for up to a week or in the refrigerator for longer storage.
- Can be frozen for up to three months; wrap individually in plastic wrap before placing in a freezer bag.
