Description

Maple Pecan Pie Stuffed Cookies are a delightful treat that combines the rich flavors of maple syrup and crunchy pecans, featuring a soft, chewy texture that melts in your mouth.

Ingredients

Scale
  • 2 cups all-purpose flour (240 g)
  • 1 cup packed brown sugar (220 g)
  • 1/2 cup granulated sugar (100 g)
  • 1 cup unsalted butter, softened (227 g)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans (120 g)
  • 1/2 cup maple syrup (120 ml)
  • 1 cup chocolate chips (170 g)
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the filling by combining chopped pecans, maple syrup, and a pinch of salt in a saucepan over low heat. Stir until heated through and slightly thickened, about 5 minutes. Let cool.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully incorporated.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  6. Fold in chocolate chips and chopped pecans until evenly distributed.
  7. Take a tablespoon of cookie dough, flatten it, place a teaspoon of filling in the center, fold the edges over, and roll into a ball. Place on the baking sheet, spacing 2 inches apart.
  8. Bake for 12-15 minutes, until edges are golden brown and centers are set but still soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Dust with powdered sugar if desired, and serve warm or at room temperature.

Notes

  • For a dairy-free option, use vegan butter instead of unsalted butter.
  • Maple syrup can be replaced with agave syrup for a different flavor.
  • Chopped walnuts can be used in place of pecans for a nutty twist.
  • Chill the dough for 30 minutes before baking to help the cookies hold their shape.
  • Use a cookie scoop for even-sized cookies that bake uniformly.
