Description

A delightful twist on the classic Philly cheesesteak sandwich, served in a bowl with tender beef, sautéed peppers, and onions over rice or quinoa.


Ingredients

  • 1 pound of thinly sliced ribeye steak
  • 1 cup bell peppers, sliced (mix of red and green)
  • 1 medium onion, sliced
  • 1 cup provolone cheese, shredded
  • 2 cups cooked rice (white or brown)
  • 1/4 cup garlic aioli (store-bought or homemade)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season the thinly sliced ribeye steak with salt and pepper. Set aside to marinate while you prepare the vegetables.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced bell peppers and onions. Sauté until they are soft and slightly caramelized, about 5-7 minutes. Remove the vegetables from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the seasoned ribeye steak. Cook until the beef is browned and cooked to your desired doneness, about 3-5 minutes.
  4. Once the beef is cooked, return the sautéed bell peppers and onions to the skillet. Stir to combine and heat through for an additional 1-2 minutes.
  5. In serving bowls, place a generous scoop of cooked rice at the bottom. Top with the beef and vegetable mixture. Sprinkle shredded provolone cheese on top and let it melt slightly before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in the microwave or on the stovetop until heated through.
  • For freezing, place the mixture in a freezer-safe container and it can be frozen for up to 2 months.
