Description

Philly Cheesesteak Roll-Ups are a delightful twist on the classic sandwich, combining tender beef, melted cheese, and sautéed onions wrapped in a soft tortilla.


Ingredients

  • 1 pound of thinly sliced beef (like ribeye or sirloin)
  • 1 medium onion, sliced
  • 1 cup of bell peppers, sliced (any color)
  • 8 ounces of provolone cheese, sliced
  • 4 large flour tortillas
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Sauté until soft and slightly caramelized, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant. Season with salt and pepper to taste, then remove from skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high and add the thinly sliced beef. Cook for about 3-5 minutes, stirring frequently, until browned and cooked through. Season with salt and pepper. Return the sautéed bell peppers and onions to the skillet, mixing everything together. Remove from heat.
  3. Lay a flour tortilla flat on a clean surface. Place a portion of the beef and vegetable mixture in the center. Top with a few slices of provolone cheese. Roll the tortilla tightly, folding in the sides to create a sealed roll. Repeat with remaining tortillas and filling.
  4. Wipe the skillet clean and return to medium heat. Place the roll-ups seam-side down in the skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy, and the cheese has melted.

Notes

  • Store in an airtight container in the refrigerator for up to three days.
  • Reheat in the oven at 350°F until warmed through.
  • For freezing, wrap each roll-up tightly in plastic wrap and then in foil; can be frozen for up to three months.
