Instructions
- Gather all your ingredients. Make sure your dates are pitted and soft. If they are hard, soak them in warm water for about 10 minutes.
- In a food processor, combine the pitted dates, raw pistachios, rolled oats, almond butter, honey, vanilla extract, and a pinch of sea salt. Pulse until the mixture is well combined and sticky.
- Use your hands to form small balls, about the size of a tablespoon. If the mixture is too sticky, wet your hands slightly to make rolling easier.
- Place the energy balls on a plate and refrigerate for at least 30 minutes to firm up. Once chilled, they are ready to enjoy!
