- 1 lb (450 g) pulled beef (cooked and shredded)
- 2 medium sweet potatoes (about 1 lb or 450 g), peeled and diced
- 1 bell pepper (any color), diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and caramelized, with crispy edges. Remove them from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper, and sauté for about 5 minutes until they are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Return the cooked sweet potatoes to the skillet with the sautéed vegetables. Stir in the pulled beef, smoked paprika, and ground cumin. Mix everything well and cook for another 5-7 minutes, allowing the flavors to meld together. Taste and adjust seasoning with salt and pepper as needed.
- Once everything is heated through and well combined, remove the skillet from heat. Garnish with fresh parsley or cilantro if desired. Serve hot as a hearty and colorful dinner that is sure to please!
