Ingredients

  • 1 lb (450 g) pulled beef (cooked and shredded)
  • 2 medium sweet potatoes (about 1 lb or 450 g), peeled and diced
  • 1 bell pepper (any color), diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender and caramelized, with crispy edges. Remove them from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and bell pepper, and sauté for about 5 minutes until they are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Return the cooked sweet potatoes to the skillet with the sautéed vegetables. Stir in the pulled beef, smoked paprika, and ground cumin. Mix everything well and cook for another 5-7 minutes, allowing the flavors to meld together. Taste and adjust seasoning with salt and pepper as needed.
  4. Once everything is heated through and well combined, remove the skillet from heat. Garnish with fresh parsley or cilantro if desired. Serve hot as a hearty and colorful dinner that is sure to please!
