Description

A delightful dish that combines savory flavors with a hint of zest, featuring tender chicken marinated in ranch dressing, grilled to perfection with garlic and Parmesan cheese.

Ingredients

Scale
  • 1 lb (450 g) chicken breast, cut into 1-inch pieces
  • 2 tablespoons ranch seasoning
  • 1 teaspoon garlic powder
  • 1/2 cup (50 g) grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 810 wooden skewers (soaked in water for 30 minutes)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the ranch seasoning, garlic powder, olive oil, salt, and pepper. Add the chicken pieces and mix well until they are evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat while you prepare the skewers.
  3. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking. Sprinkle the grated Parmesan cheese over the chicken for added flavor.
  4. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure the internal temperature reaches 165°F (75°C) for safety.

Notes

  • For a dairy-free option, use a dairy-free ranch dressing and nutritional yeast instead of Parmesan.
  • Chicken can be swapped for tofu or shrimp for a different protein choice.
  • Feel free to add vegetables like bell peppers or zucchini to the skewers for extra flavor and nutrition.
  • Store any leftover skewers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place the skewers in the oven at 350°F (175°C) for about 10 minutes or until heated through.
