Description
A delightful treat that combines the sweet and tart flavors of fresh raspberries with the rich, nutty taste of almonds, perfect for brunch or a cozy snack.
Ingredients
Scale
- 1 sheet of puff pastry, thawed
- 1 cup fresh raspberries
- 1/2 cup almond paste
- 1/4 cup powdered sugar (for dusting)
- 1 egg (for egg wash)
- 1/4 cup sliced almonds
- 1 teaspoon vanilla extract
- 1 tablespoon sugar (optional, for sweetness)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond paste, vanilla extract, and sugar (if using) until smooth.
- Roll out the puff pastry sheet on a lightly floured surface and cut it into a rectangle, approximately 12 inches by 8 inches.
- Spread the almond paste mixture evenly over the puff pastry, leaving a small border around the edges, and distribute the fresh raspberries on top.
- Starting from one long side, gently fold the pastry over the filling to create a twisted shape.
- Beat the egg in a small bowl and brush it over the top of the pastry. Sprinkle sliced almonds on top.
- Bake in the preheated oven for 20-25 minutes, or until puffed and golden brown.
- Let cool for a few minutes and dust with powdered sugar before serving.
Notes
- Use gluten-free puff pastry for a gluten-free option.
- Swap almond paste with marzipan for a sweeter flavor.
- Replace raspberries with blueberries or strawberries for a different fruit twist.
- To make vegan, substitute the egg wash with plant-based milk and use vegan puff pastry.
