  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon salt
  • 1 cup finely chopped pistachios
  • 1 cup raspberry ice cream
  • Additional crushed pistachios for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time and mix in the vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl, then gradually add to the wet mixture.
  5. Fold in the finely chopped pistachios.
  6. Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart, and flatten slightly.
  7. Bake for 10-12 minutes until edges are golden brown and centers are soft. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  8. Once cooled, place a scoop of raspberry ice cream on one cookie and top with another cookie to create a sandwich.
  9. Sprinkle crushed pistachios on the sides of the exposed ice cream.
