- 1 cup raspberry ice cream

Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time and mix in the vanilla extract.
- Whisk together the all-purpose flour, baking soda, and salt in a separate bowl, then gradually add to the wet mixture.
- Fold in the finely chopped pistachios.
- Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart, and flatten slightly.
- Bake for 10-12 minutes until edges are golden brown and centers are soft. Cool on baking sheets for 5 minutes before transferring to a wire rack.
- Once cooled, place a scoop of raspberry ice cream on one cookie and top with another cookie to create a sandwich.
- Sprinkle crushed pistachios on the sides of the exposed ice cream.
- Serve immediately or freeze for about 30 minutes to firm up before serving.
