- 1 large head of cabbage
- 1 pound ground beef
- 1 cup uncooked long-grain rice
- 2 cans (14.5 oz each) diced tomatoes
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon paprika
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
- 1 tablespoon olive oil (for sautéing)
- 1 cup beef broth or water (optional, for added moisture)
Instructions
- Prepare the cabbage by removing the core and peeling off 8-10 large leaves.
- In a large skillet, heat olive oil and sauté diced onion and minced garlic until translucent. Add ground beef, season, and cook until browned.
- In a large bowl, mix the cooked beef mixture with uncooked rice and one can of diced tomatoes.
- Layer the bottom of the slow cooker with a thin layer of diced tomatoes. Spoon the beef and rice filling into cabbage leaves, roll them up, and place seam-side down in the slow cooker.
- If desired, pour beef broth or water over the cabbage rolls.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until cabbage is tender and rice is cooked.
