A delightful twist on two beloved favorites, this Smashburger Quesadilla features crispy tortillas filled with juicy, seasoned beef and melted cheese, perfect for any occasion.


Ingredients

  • 4 large flour tortillas
  • 1 lb (450 g) ground beef
  • 1 cup shredded cheddar cheese (about 100 g)
  • 1 cup shredded pepper jack cheese (about 100 g)
  • 1 medium onion, diced
  • 12 jalapeños, sliced (adjust to taste)
  • 1 packet taco seasoning (about 1 oz or 28 g)
  • 2 tablespoons olive oil (for cooking)
  • Sour cream (for serving)
  • Salt and pepper (to taste)

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and sauté until caramelized and translucent, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the ground beef, season with salt, pepper, and taco seasoning. Cook until browned and fully cooked, about 7-10 minutes. Drain excess fat.
  3. Return the caramelized onions to the skillet with the ground beef. Stir in the sliced jalapeños and mix well. Remove from heat.
  4. Lay one flour tortilla flat. On one half, sprinkle a layer of cheddar cheese, followed by pepper jack cheese. Spoon a portion of the beef and onion mixture over the cheese, then top with more cheese. Fold the tortilla over.
  5. In a clean skillet over medium heat, add a small amount of olive oil. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side until golden brown and crispy, and the cheese is melted. Repeat with remaining tortillas and filling.
  6. Remove the quesadillas from the skillet, let cool for a minute, then cut into triangles. Serve warm with sour cream.
