Description
A healthy twist on traditional chow mein using spaghetti squash.
Ingredients

- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup bell pepper, sliced
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half and remove the seeds.
- Drizzle olive oil on the cut sides and place face down on a baking sheet.
- Bake for 40 minutes or until tender.
- In a pan, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add bell pepper, carrots, and broccoli, and stir-fry for 5 minutes.
- Scrape the spaghetti squash strands into the pan and mix.
- Add soy sauce and sesame oil, and stir well.
- Garnish with green onions before serving.
Notes
- Adjust the vegetables based on your preference.
- Use tamari for a gluten-free option.
- Store leftovers in an airtight container in the fridge.
