Spiced Pumpkin Crème Brûlée is a delightful twist on the classic dessert, featuring creamy pumpkin and warm spices, perfect for fall gatherings.

- 2 cups heavy cream
- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 5 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup brown sugar (for caramelizing the top)
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, combine the heavy cream, pumpkin puree, granulated sugar, vanilla extract, ground cinnamon, and ground nutmeg. Heat until hot but not boiling.
- In a separate bowl, whisk the egg yolks until well combined. Gradually add the hot cream mixture to the egg yolks, whisking constantly.
- Strain the custard mixture through a fine-mesh sieve into a large measuring cup or bowl.
- Pour the custard mixture into ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for about 30-35 minutes.
- Let them cool, then refrigerate for at least 2 hours or overnight.
- Before serving, sprinkle a thin layer of brown sugar on top and caramelize with a kitchen torch.
Notes
- Store uncaramelized crème brûlée in the refrigerator for up to 3 days.
- Avoid adding the sugar topping until ready to serve.
- Freezing is not recommended as it can affect the texture.
