Description

Spinach Feta Quesadillas are a delightful blend of flavors and textures, featuring creamy feta cheese and fresh spinach in a savory filling. Quick to prepare and versatile, they make an ideal weeknight dinner or party appetizer.


Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Black pepper to taste

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  2. In a mixing bowl, combine the sautéed spinach and garlic with the crumbled feta cheese and shredded mozzarella cheese. Season with black pepper to taste and mix well.
  3. Lay one flour tortilla flat on a clean surface. Spoon a generous amount of the spinach and cheese mixture onto one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the remaining tortillas and filling.
  4. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Place one or two quesadillas in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy, and the cheese is melted. Remove from the skillet and let cool for a minute before slicing into wedges.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place quesadillas in a skillet over low heat or microwave them.
  • For longer storage, freeze wrapped in foil for up to 2 months.
