- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Black pepper to taste
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed spinach and garlic with the crumbled feta cheese and shredded mozzarella cheese. Season with black pepper to taste and mix well.
- Lay one flour tortilla flat on a clean surface. Spoon a generous amount of the spinach and cheese mixture onto one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the remaining tortillas and filling.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Place one or two quesadillas in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy, and the cheese is melted. Remove from the skillet and let cool for a minute before slicing into wedges.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, place quesadillas in a skillet over low heat or microwave them.
- For longer storage, freeze wrapped in foil for up to 2 months.
