Description

A delightful blend of flavors with tender and juicy meatballs infused with aromatic spices and herbs, served in a creamy coconut curry sauce.


Ingredients

  • 500 grams ground chicken (about 1 pound)
  • 400 ml coconut milk (1 can)
  • 3 tablespoons red curry paste
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)
  • 1/2 cup breadcrumbs
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 2 green onions, sliced (for garnish)
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. In a large bowl, combine the ground chicken, minced garlic, grated ginger, chopped cilantro, breadcrumbs, lime juice, fish sauce, salt, and pepper. Mix well until all ingredients are fully incorporated.
  2. With your hands, shape the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the formed meatballs on a plate or tray.
  3. In a large skillet, heat the olive oil over medium heat. Once hot, add the meatballs in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides and cooked through. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add the red curry paste and cook for about 1 minute until fragrant. Then, pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.
  5. Return the cooked meatballs to the skillet with the curry sauce. Gently stir to coat the meatballs in the sauce. Allow them to simmer in the sauce for an additional 5-10 minutes, letting the flavors meld together.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm the meatballs in a skillet over low heat until heated through.
  • For freezing, place the meatballs in a freezer-safe container and freeze for up to 3 months.
