- 500 grams ground chicken (about 1 pound)
- 400 ml coconut milk (1 can)
- 3 tablespoons red curry paste
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup fresh cilantro, chopped (plus extra for garnish)
- 1/2 cup breadcrumbs
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 2 green onions, sliced (for garnish)
- Salt, to taste
- Pepper, to taste
- 2 tablespoons olive oil (for cooking)
Instructions
- In a large bowl, combine the ground chicken, minced garlic, grated ginger, chopped cilantro, breadcrumbs, lime juice, fish sauce, salt, and pepper. Mix well until all ingredients are fully incorporated.
- With your hands, shape the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the formed meatballs on a plate or tray.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the meatballs in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides and cooked through. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the red curry paste and cook for about 1 minute until fragrant. Then, pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.
- Return the cooked meatballs to the skillet with the curry sauce. Gently stir to coat the meatballs in the sauce. Allow them to simmer in the sauce for an additional 5-10 minutes, letting the flavors meld together.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm the meatballs in a skillet over low heat until heated through.
- For freezing, place the meatballs in a freezer-safe container and freeze for up to 3 months.
