Description
Thai Peanut Chicken Wraps are a delightful blend of flavors and textures, featuring tender chicken, crunchy veggies, and creamy peanut sauce, perfect for lunch, dinner, or as a party appetizer.
Ingredients
Scale
- 2 grilled chicken breasts, sliced
- 1/2 cup peanut sauce (store-bought or homemade)
- 1 cup fresh cilantro leaves, chopped
- 1 cup shredded carrots
- 1 cup red cabbage, thinly sliced
- 4 whole wheat tortillas
- 1 tablespoon olive oil (for toasting)
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Grill the chicken breasts until fully cooked, about 6-7 minutes per side. Allow to rest before slicing.
- Make the Peanut Sauce: Combine peanut butter, soy sauce, honey, rice vinegar, and water in a bowl. Whisk until smooth.
- Prepare the Vegetables: Wash and chop cilantro, shred carrots, and slice red cabbage.
- Assemble the Wraps: Spread peanut sauce on a tortilla, layer with chicken, carrots, cabbage, and cilantro.
- Roll the Wraps: Roll the tortilla tightly around the filling, tucking in the sides.
- Toast the Wraps: Heat olive oil in a skillet and cook wraps seam-side down for 2-3 minutes on each side.
- Serve: Let cool, slice in half, and serve with extra peanut sauce.
Notes
- For a vegetarian option, use tofu instead of chicken.
- For nut allergies, substitute peanut sauce with almond or sunflower seed butter.
- Store leftovers in an airtight container in the fridge and consume within 1-2 days.
