Description
A comforting tomato soup served with cheesy herbed dumplings.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup all-purpose flour
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons fresh herbs (basil or parsley)
Instructions
- Heat olive oil in a pot over medium heat.
- Sauté onion and garlic until soft.
- Add crushed tomatoes, vegetable broth, sugar, salt, and pepper.
- Simmer for 20 minutes.
- Stir in heavy cream and adjust seasoning.
- For dumplings, mix flour, cheese, and herbs in a bowl.
- Add water gradually to form a dough.
- Drop spoonfuls into the simmering soup.
- Cook for 10 minutes until dumplings are fluffy.
Notes
- Use fresh herbs for better flavor.
- Adjust the thickness of the soup by adding more or less broth.
- Serve immediately for best texture.
