Description
A delicious salmon dish coated with coconut and served with a fresh pineapple salsa.
Ingredients

- 4 salmon fillets
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/4 cup honey
- 1/4 cup coconut milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup diced pineapple
- 1/4 cup chopped cilantro
- 1 lime, juiced
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix coconut, panko, honey, coconut milk, salt, and pepper.
- Place salmon fillets on a baking sheet.
- Spread the coconut mixture over the salmon fillets.
- Bake for 15-20 minutes until salmon is cooked through.
- In another bowl, combine diced pineapple, cilantro, and lime juice.
- Serve salmon topped with pineapple salsa.
Notes
- Adjust sweetness by adding more or less honey.
- Use fresh pineapple for best flavor.
- Can substitute salmon with another fish if desired.
