- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups grated carrots
- ½ cup chopped pecans optional
- ½ cup raisins or crushed pineapple optional
- Cream Cheese Frosting:
- 8 oz cream cheese softened
- ¼ cup unsalted butter softened
- 1 cup powdered sugar
- ½ tsp vanilla extract
- Topping:
- ¼ cup caramel sauce
- ¼ cup chopped pecans
Preheat oven and grease a baking pan.
Whisk dry ingredients together in a bowl.
Beat oil, sugars, and eggs until smooth. Stir in vanilla and carrots.
Gradually mix in dry ingredients, then fold in pecans.
Pour batter into pan and bake until a toothpick comes out clean.
Cool, then frost with cream cheese frosting.
Drizzle caramel and sprinkle pecans on top.
