Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups grated carrots
  • ½ cup chopped pecans optional
  • ½ cup raisins or crushed pineapple optional
  • Cream Cheese Frosting:
  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • Topping:
  • ¼ cup caramel sauce
  • ¼ cup chopped pecans

Instructions
 

  • Preheat oven and grease a baking pan.
  • Whisk dry ingredients together in a bowl.
  • Beat oil, sugars, and eggs until smooth. Stir in vanilla and carrots.
  • Gradually mix in dry ingredients, then fold in pecans.
  • Pour batter into pan and bake until a toothpick comes out clean.
  • Cool, then frost with cream cheese frosting.
  • Drizzle caramel and sprinkle pecans on top.
