For the Crust:
- 2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 2 tbsp sugar optional
For the Cheesecake Filling:
- 24 oz cream cheese softened
- 1 cup granulated sugar
- 3 eggs
- 8 oz melted semisweet chocolate cooled
- 1/2 cup heavy cream
- 1 tsp vanilla extract
For the Chocolate Ganache:
- 4 oz semisweet chocolate chopped
- 1/2 cup heavy cream
Prepare the Crust: Preheat the oven to 350°F. Mix chocolate cookie crumbs, melted butter, and sugar until it resembles wet sand. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
Make the Filling: Blend cream cheese and sugar until smooth. Add eggs one at a time, mixing fully. Stir in melted chocolate, heavy cream, and vanilla extract. Pour over the cooled crust.
Bake the Cheesecake: Bake at 325°F for 50–60 minutes until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.
Prepare the Ganache: Heat the heavy cream until it simmers, then pour over chopped chocolate. Stir until smooth. Drizzle over the cooled cheesecake.
