Crust:
- 2 cups graham cracker crumbs or crushed biscuits
- 1/2 cup unsalted butter melted
- 1/4 cup granulated sugar
Filling:
- 24 oz 3 blocks cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 4 oz melted semi-sweet chocolate
Topping (Optional):
- Whipped cream chocolate shavings, or chocolate sauce drizzle
Prepare the crust: Preheat oven to 325°F (163°C). Combine graham cracker crumbs, melted butter, and sugar. Press into a springform pan and bake for 8 minutes. Let cool.
Make the filling: Blend cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
Add the chocolate swirl: Melt semi-sweet chocolate. Spread half of the batter onto the crust, drizzle with melted chocolate, and swirl with a knife. Pour the rest of the batter and swirl again.
Bake and chill: Bake for 50-60 minutes, until the edges are firm and the center is slightly wobbly. Let cool in the oven for 1 hour, then refrigerate for at least 4 hours, ideally overnight.
Serve with optional toppings: Whipped cream, chocolate shavings, or drizzle with chocolate sauce for extra indulgence.
