Ingredients

  • 1 1/4 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp white sugar
  • 1/8 tsp salt
  • 1 cup milk
  • 2 tbsp melted butter
  • 1 egg
  • 1/4 tsp vanilla extract

Instructions

  • In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
  • Add milk, melted butter, egg, and vanilla extract. Gently mix until just combined—some lumps are okay.
  • Heat a nonstick skillet over medium heat. Lightly grease with butter or oil if needed.
  • Pour about 1/3 cup of batter into the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges begin to dry, about 2–3 minutes.
  • Flip and cook the other side for 1–2 minutes until golden brown.
  • Transfer pancakes to a plate and cover with a towel to keep warm.
  • Repeat with remaining batter. Serve warm with butter, syrup, or fresh fruit.
