In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
Add milk, melted butter, egg, and vanilla extract. Gently mix until just combined—some lumps are okay.
Heat a nonstick skillet over medium heat. Lightly grease with butter or oil if needed.
Pour about 1/3 cup of batter into the skillet for each pancake.
Cook until bubbles form on the surface and the edges begin to dry, about 2–3 minutes.
Flip and cook the other side for 1–2 minutes until golden brown.
Transfer pancakes to a plate and cover with a towel to keep warm.
Repeat with remaining batter. Serve warm with butter, syrup, or fresh fruit.
