Ingredients
  

  • 1 ½ cups whole wheat flour
  • ½ cup coconut oil melted
  • ¾ cup coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup dark chocolate chips 70% cacao or higher

Optional Add-ins:

  • ½ cup chopped nuts e.g., walnuts
  • ½ cup oats

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a non-stick silicone mat.
  • Mix Wet Ingredients: In a large bowl, combine the melted coconut oil, coconut sugar, egg, and vanilla extract. Stir until smooth and well blended.
  • Mix Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, and salt.
  • Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients, mixing gently until just combined. Do not overmix.
  • Fold in Chocolate Chips: Gently fold in the dark chocolate chips and any optional add-ins like chopped nuts or oats.
  • Shape Cookies: Drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  • Bake: Bake for 10–12 minutes, until the edges are golden and the centers are firm.
  • Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
