Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Glaze:

  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Cream butter and sugar until light and fluffy.
  • Add eggs, lemon juice, zest, and vanilla, mixing well.
  • Sift in flour, baking powder, and salt, mixing until combined.
  • Scoop dough into small rounds and place on the baking sheet.
  • Bake for 10–12 minutes, until edges are lightly golden.
  • Cool completely before drizzling with lemon glaze.
