Ingredients
  

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • 1 tsp vanilla extract
  • ½ cup melted butter

For the Lemon Filling:

  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 ¼ cups boiling water
  • ¾ cup granulated sugar
  • 2 tbsp cornstarch optional

Instructions
 

  • Preheat oven to 350°F (175°C). Pour melted butter into a 9x9-inch baking dish.
  • Make the batter: Mix flour, sugar, baking powder, salt. Add milk and vanilla. Pour over butter—do not stir.
  • Make lemon mixture: Combine lemon juice, zest, sugar, and cornstarch. Pour over batter. Then pour boiling water on top. Do not stir.
  • Bake for 40–45 minutes until golden on top.
  • Cool slightly and serve warm with optional toppings like ice cream or whipped cream.
