For the Batter:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 cup milk
- 1 tsp vanilla extract
- ½ cup melted butter
For the Lemon Filling:
- ½ cup fresh lemon juice
- 1 tbsp lemon zest
- 1 ¼ cups boiling water
- ¾ cup granulated sugar
- 2 tbsp cornstarch optional
Preheat oven to 350°F (175°C). Pour melted butter into a 9x9-inch baking dish.
Make the batter: Mix flour, sugar, baking powder, salt. Add milk and vanilla. Pour over butter—do not stir.
Make lemon mixture: Combine lemon juice, zest, sugar, and cornstarch. Pour over batter. Then pour boiling water on top. Do not stir.
Bake for 40–45 minutes until golden on top.
Cool slightly and serve warm with optional toppings like ice cream or whipped cream.
