- 1 1/4 sticks 10 tbsp unsalted butter
- 1/2 cup white chocolate chips
- 2 tbsp matcha powder culinary-grade or higher
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 3 tsp bourbon vanilla extract
- 1/2 tsp kosher salt
- 3 large eggs
- 3/4 cup all-purpose flour
Preheat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
Melt the butter (either in the microwave or stovetop).
In a bowl, combine white chocolate chips and matcha powder. Pour melted butter over it and stir until smooth and lump-free.
In a large mixing bowl, add granulated and brown sugar. Beat in eggs with an electric mixer for 3–5 minutes until thick and pale.
Pour in the matcha-white chocolate mixture and mix gently. Stir in the vanilla extract.
Sift in flour and salt, then gently fold with a spatula until just combined. Don’t overmix.
Pour batter into the prepared pan. Bake for 20 minutes, then remove and drop the pan 2–3 times on the counter (this helps remove air pockets).
Return to oven and bake for another 15 minutes. Once baked, drop the pan again 2 more times and cool for 1 hour.
Lift brownies using parchment paper, slice cleanly, and serve!
