For the Peach Coating:
- 2 cups fresh peaches pureed
- 1/4 cup water
- 1/2 cup sugar or substitute
- 1 tbsp lemon juice
- 1 tbsp gelatin optional
- Food coloring optional
For the Ice Cream Filling:
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 1 tsp vanilla extract
- 4 oz cream cheese or cornstarch
Make the Peach Coating: Puree fresh peaches and combine them with water, sugar, and lemon juice in a saucepan. Heat until the sugar dissolves. If using gelatin, hydrate it and add to the peach mixture. Let the mixture cool for 10-15 minutes, and add food coloring if desired.
Make the Ice Cream Base: In a saucepan, combine heavy cream, milk, and sugar. Heat until the sugar dissolves. In a separate bowl, whisk together vanilla extract and cream cheese, then blend with the hot cream mixture. Let it cool in the fridge.
Assemble the Pops: Pour some of the peach mixture into popsicle molds to create the outer shell. Freeze until firm, then add the ice cream base and insert sticks. Freeze for 4-6 hours or overnight.
Serve: Dip the molds in warm water to release the popsicles and serve!
