- 1 box pistachio pudding mix 3.4 oz
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1/2 cup sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 cup milk
- 1 teaspoon vanilla extract
- ½ cup chopped pistachios optional
Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, mix together the pistachio pudding mix, flour, baking soda, salt, and sugar.
In a separate bowl, whisk the eggs, oil, milk, and vanilla extract until smooth.
Combine the wet and dry ingredients, stirring until just combined.
