Ingredients
  

  • 1 box pistachio pudding mix 3.4 oz
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1/2 cup sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • ½ cup chopped pistachios optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a large bowl, mix together the pistachio pudding mix, flour, baking soda, salt, and sugar.
  • In a separate bowl, whisk the eggs, oil, milk, and vanilla extract until smooth.
  • Combine the wet and dry ingredients, stirring until just combined.
  • Pour the batter into the prepared pan and sprinkle chopped pistachios on top (optional).
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
