For the Pistachio Syrup:
- 1 cup shelled pistachios
- ½ cup sugar
- ½ cup water
- 1 tbsp lemon juice
For the Pistachio Mascarpone Cream:
- 8 oz mascarpone cheese
- 1 cup heavy cream
- ½ cup pistachio paste or ground pistachios
- ¼ cup powdered sugar
- 1 tsp vanilla extract
For the Tiramisu Layers:
- 24 pieces ladyfingers
- ½ cup pistachio syrup
- ¼ cup pistachio shavings for garnish
Prepare Pistachio Syrup: Simmer pistachios, sugar, water, and lemon juice until thickened. Cool and strain.
Make Pistachio Mascarpone Cream: Beat mascarpone, sugar, and vanilla, then fold in whipped cream and pistachio paste.
