- 1 ½ cups crushed graham crackers
- ⅓ cup melted butter
- 3 cups cream cheese softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup pumpkin puree
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- Pinch of salt
- Optional: Whipped cream for topping
Prepare the crust: Preheat the oven to 325°F (163°C). Mix crushed graham crackers and melted butter, then press into the bottom of a springform pan. Bake for 10 minutes.
Make cheesecake filling: Beat cream cheese and sugar until smooth, then add eggs one at a time. Divide batter into two bowls.
Pumpkin mixture: Add pumpkin puree and spices to one bowl, mixing until smooth.
