- 1 cup 240g sourdough starter
- 3 1/2 cups 440g all-purpose flour
- 1/4 cup 60ml milk
- 1 tsp salt
- 1 tbsp sugar
- 2 1/4 tsp active dry yeast
- 1/2 cup 115g unsalted butter (chilled, for layering)
- 1/2 cup 120ml water
Combine sourdough starter, flour, yeast, sugar, salt, and water to form dough.
Knead until smooth and let it rise for 1-2 hours.
Roll out dough and layer with chilled butter. Fold and refrigerate.
Shape dough into croissants and let rise again.
Bake at 375°F for 20-25 minutes until golden brown.
