Ingredients
  

For the Crust:

  • 1 cup graham cracker crumbs or digestive biscuits
  • 4 tablespoons melted butter
  • 2 tablespoons sugar

For the Cheesecake Filling:

  • 8 oz 1 block cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¼ cup sour cream or yogurt

For the Strawberry Topping:

  • 1 cup fresh strawberries sliced or diced
  • 2 tablespoons strawberry jam or puree
  • Optional: 1 tablespoon powdered sugar

Instructions
 

Step 1: Prepare the Crust

  • Preheat the oven to 350°F (175°C).
  • Mix graham cracker crumbs, melted butter, and sugar in a bowl until it resembles wet sand.
  • Press the mixture into the bottoms of a mini muffin tin or silicone molds.
  • Bake for 5–7 minutes. Let it cool.

Step 2: Make the Cheesecake Filling

  • Beat the cream cheese and sugar until smooth.
  • Mix in eggs, one at a time. Stir in vanilla extract and sour cream.
  • Spoon the mixture over the prepared crusts, filling each mold about ¾ full.

Step 3: Bake and Cool

  • Bake for 15–20 minutes until the centers are set but slightly jiggly.
  • Let cool at room temperature, then refrigerate for at least 2 hours.

Step 4: Add the Strawberry Topping

  • Top each cheesecake bite with fresh strawberries and a dollop of strawberry jam or puree.
  • Optionally, dust with powdered sugar before serving.
