For the taco shells:
- 8 small flour tortillas
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 2 tbsp unsalted butter melted
For the cheesecake filling:
- 8 oz cream cheese softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries diced
For garnish:
- Fresh strawberries sliced
- Whipped cream
- Chocolate or strawberry syrup for drizzling
Prepare the Taco Shells
Preheat the oven to 375°F (190°C).
Mix the sugar and cinnamon in a bowl.
Brush melted butter on both sides of the tortillas, then coat them with the cinnamon sugar mixture.
Drape the tortillas over the rungs of an inverted baking rack to form a taco shape.
Bake for 8–10 minutes until golden and crispy. Let them cool completely.
Make the Cheesecake Filling
Beat cream cheese in a large bowl until smooth.
Add powdered sugar and vanilla extract, mixing well.
In a separate bowl, whip heavy cream until stiff peaks form.
Fold the whipped cream into the cream cheese mixture until smooth and fluffy.
Gently mix in the diced strawberries.
Assemble the Tacos
Spoon or pipe the cheesecake filling into the taco shells.
Top with sliced strawberries, whipped cream, and a drizzle of chocolate or strawberry syrup.
Serve immediately.
