Ingredients
  

For the Crust:

  • 2 cups chocolate cookie crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted

For the Cheesecake Filling:

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup sour cream

For the Topping:

  • 1 cup caramel sauce
  • ¾ cup chopped pecans
  • ½ cup chocolate chips melted
  • Extra caramel and chocolate for drizzling

Instructions
 

  • Prepare the crust: Mix cookie crumbs, sugar, and melted butter, then press into a springform pan and bake at 325°F for 10 minutes.
  • Make the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream.
  • Bake: Pour batter over the crust and bake at 325°F for 50–55 minutes. Let cool in the oven with the door slightly open.
  • Add toppings: Spread caramel sauce, sprinkle pecans, and drizzle melted chocolate. Chill for at least 4 hours before serving.
