- 2 medium zucchinis, grated
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 sub rolls
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, mix grated zucchini, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake meatballs for 20-25 minutes until golden brown.
- While the meatballs bake, heat the marinara sauce in a saucepan.
- Once meatballs are done, place them in the sub rolls.
- Top with marinara sauce and shredded mozzarella cheese.
- Return to the oven and bake for an additional 5-10 minutes until cheese melts.
- Serve warm.
