Description

Zucchini meatball subs are a delicious and healthy alternative to traditional meatball subs, featuring flavorful zucchini meatballs served in a hearty sub roll with marinara sauce and cheese.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 sub rolls
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grate the zucchinis and squeeze out excess moisture.
  3. In a bowl, mix grated zucchini, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper.
  4. Form the mixture into meatballs and place them on a baking sheet.
  5. Bake meatballs for 20-25 minutes until golden brown.
  6. While the meatballs bake, heat the marinara sauce in a saucepan.
  7. Once meatballs are done, place them in the sub rolls.
  8. Top with marinara sauce and shredded mozzarella cheese.
  9. Return to the oven and bake for an additional 5-10 minutes until cheese melts.
  10. Serve warm.
